Maple Beer Foam Old Fashioned
A bold, spirit-forward cocktail topped with creamy maple stout foam and a subtle orange mist. It’s elegant, unexpected, and a real crowd-pleasing show stopper.

Maple Stout Foam
Ingredients
7.5 oz stout beer
0.25 oz maple syrup
0.5 g (small pinch) xanthan gum
4 drops 20% saline solution (see notes from the bar below)
Instructions:
Add all ingredients to a blender and blend until smooth and fully combined.
Pour into a cream whipper (we use the iSi Gourmet Whip and Pure Whip Cartridges).
Charge with one N₂O cartridge, shake, and refrigerate for at least 1 hour before using.
The foam will keep chilled for up to 3 days. Shake gently before each use.
Old Fashioned Cocktail
Ingredients:
2 oz Jameson Black Barrel (or other quality Irish whiskey)
2 dashes Angostura bitters
¼ oz rich demerara syrup
1 drop 20% saline solution
Large clear ice cube
Instructions:
In a mixing glass, stir whiskey, bitters, demerara syrup, and saline with ice until well chilled.
Strain into a double Old Fashioned glass over a large ice cube.
Top with maple stout foam from the iSi Gourmet Whipper.
Finish with an orange mist (made by combining 1 oz vodka + 6 drops food grade orange essential oil in a small spray bottle).
Optional: Garnish with a light orange peel zest or chocolate shaving.
Notes from the Bar
Whiskey Choice
Jameson Black Barrel gives this cocktail depth and warmth, but any smooth, full-bodied Irish or bourbon whiskey works beautifully.
Maple Beer Foam
The star of this drink. It's creamy, malty, and lightly sweet with notes of maple and stout. Prepare it in advance so it’s chilled and ready to layer.
Saline Solution
A 20% saline mix means 20 grams of kosher salt dissolved into 80 grams of water. If you don’t have a scale, that’s about 1 tablespoon of salt mixed into ¼ cup of water. Stir until the salt fully dissolves and store in a small dropper bottle. Add 3–4 drops to cocktails for balance and depth without any salty taste.
Serving Tip
Serve over a large clear ice cube in a double Old Fashioned glass to maintain the foam’s texture and the drink’s temperature.
No Whipper?
If you don’t have a cream whipper, spoon a bit of frothy beer head on top for a rustic finish.
Flavor Balance
Adjust sweetness by adding more or less demerara syrup to match your preferred level of richness.
Orange Spritz
We love using food grade essentail oil sprtizes for our cocktails, especailly we won't have citrus on hand for a fresh peel. We use Viva Doria oils and these atomizer spray bottles.
