Instructions

Add lemon juice if using.

Ingredients
1½ oz Aperol
1 oz fresh blood orange juice
½ oz spiced hibiscus syrup (see below)
1–2 oz Prosecco
Optional: 1 oz sparkling water
Optional: edible glitter
Garnish: blood orange slice
Instructions
Fill a small stemless wine glass with crushed ice.
Add Aperol, blood orange juice, and syrup.
Top with 1–2 oz Prosecco and sparkling water if desired.
Garnish with a blood orange wheel.
Spiced Hibiscus Syrup
2 cups water
1 cup dried hibiscus flowers
2 tablespoons minced fresh ginger
2 cinnamon sticks
2 orange peels
1 cup sugar (or equal to the amount of brewed tea)
Instructions
In a medium saucepan, combine water, hibiscus flowers, ginger, cinnamon sticks, and orange peels.
Bring to a gentle simmer, cover, and cook for 3–4 minutes.
Remove from heat and let steep for 15 minutes.
Strain through a fine mesh sieve, pressing gently to extract the liquid (you should have about 1 cup).
Return the liquid to the saucepan and add sugar, stirring over low heat until fully dissolved.
Cool to room temperature, then transfer to a jar or bottle and refrigerate for up to 3 weeks.

Ingredients
2 oz gin
1 oz strawberry shrub
½ oz lemon juice½ oz lime juice
¾ oz heavy cream
1 egg white
4 drops food-grade rosewater
4 drops saline
1 oz soda water (in bottom of glass)
Garnish: mint
Instructions
Shake all ingredients except soda with ice.
Discard ice and dry shake.
Add soda to glass.
Double strain cocktail over the soda.
Freeze 5–10 minutes to set the foam.
Add a splash of soda through a hole in the foam dome.
Garnish with mint.

The dome comes from the dry shake + soda-under-pour technique.
Heavy cream + egg white = velvety but light.
Use only food-grade rosewater (Cortas is great).
