Limerence
A modern gin sour with a romantic twist. Bright citrus and bittersweet Aperol balanced by silky egg white foam, making it as refreshing as it is elegant.

Ingredients
1 ½ oz gin
¾ oz Aperol
¾ oz lemon juice
½ oz simple syrup
2 dashes rhubarb bitters
1 egg white
Instructions
Chill a coupe glass in the freezer.
In a shaker without ice, combine gin, Aperol, lemon juice, simple syrup, rhubarb bitters, and egg white.
Dry shake vigorously for 10 seconds to create a frothy texture.
Add ice and shake for an additional 10 seconds until well chilled.
Strain into the chilled coupe glass and garnish with a lemon wheel.

Why the Dry Shake?
Shaking without ice first (a “dry shake”) helps whip the egg white into a silky foam, giving the cocktail its signature frothy top.
Bitters for Balance
Rhubarb bitters add a subtle tartness and complexity that balances the sweetness of the Aperol and syrup. Don’t skip them—they really round out the drink.
Citrus Freshness
Freshly squeezed lemon juice is a must. Bottled lemon juice won’t deliver the same brightness.
Glassware Tip
Serve this cocktail in a chilled coupe glass for the perfect presentation—it keeps the foam intact and the drink crisp.
