
Fig & Thyme Gin Sour
Gin with fig preserves, honey syrup, and fresh lemon — rich and fruity with a quiet herbal note from thyme and a silky egg white foam.

Build Your Drink
Ingredients
2 oz gin
¾ oz fresh lemon juice
½ oz honey syrup (1:1 honey + hot water, cooled)
1 tbsp fig preserves (or 1–2 fresh figs, muddled)
1 egg white (optional, for foam)
Thyme sprig + fig slice, for garnish
Cooking Method
If using fresh figs, muddle them in the bottom of a shaker. If using fig preserves, add directly to shaker.
Add gin, lemon juice, honey syrup, and egg white (if using).
Dry shake (no ice) for 15 seconds to emulsify.
Add ice and shake again until well chilled and frothy.
Double strain into a coupe or Nick & Nora glass.
Garnish with a thyme sprig and fig slice.
