Blushed Gin Fizz

A gin fizz with strawberry shrub, rosewater, and heavy cream — soft, floral, and finished with a dramatic foam dome.

This cocktail is part of our Date Nite collection, made to be sipped while you cook together.​

Build Your Drink

Ingredients

  • 2 oz gin

  • 1 oz strawberry shrub

  • ½ oz lemon juice

  • ½ oz lime juice

  • ¾ oz heavy cream

  • 1 egg white

  • 4 drops food-grade rosewater

  • 4 drops saline solution*

  • 1 oz soda water (in bottom of glass)

  • Fresh mint sprig, for garnish

*To make saline: mix 80g water with 20g kosher salt, or use a small pinch of salt.

Cocktail Method

  1. Shake all ingredients (except soda water) with a large ice cube until well chilled.

  2. Discard ice and shake again (dry shake) to build the foam.

  3. Pour 1 oz soda into the bottom of a chilled Collins glass.

  4. Double strain cocktail over the soda.

  5. Freeze 5–10 min to set the foam.

  6. Poke a hole in the foam and add a touch more soda for a dramatic dome.

  7. Garnish with a mint sprig.

Prep Ahead, Impress Later

This cocktail uses our homemade strawberry shrub that’s well worth the wait. We let it sit in sugar for a full day before adding vinegar, so plan to make it ahead.


That Signature Dome

The foam dome takes a little technique but creates a wow factor every time. Don’t skip the dry shake, the soda-under-pour, and that final trickle of fizz to lift the top.


Creamy but Light

Even with heavy cream and egg white, this drink finishes airy and bright. It's perfect for spring or summer when you want something impressive but not too heavy.

Be sure to use food-grade rosewater when mixing drinks—not cosmetic or fragrance versions. We love and recommend the Cortas brand for a delicate floral note that’s cocktail-safe and delicious.
