A few extra tips and tricks to help you get the most out of this week’s menu, straight from our own kitchen.
Pick Your Protein
We’re serving this with chicken, but it’s super versatile. You could swap in salmon, shrimp, steak, marinated tempeh, or just bulk it up with extra veggies for a vegetarian version. Totally your call.
Cheese Swap Options
We love the bold flavor of blue cheese with the figs and grilled corn, but if that’s not your thing, feta, goat cheese, or even sharp cheddar would work great. Use whatever makes your salad heart happy.
Roast Those Veggies
Roasting the corn and veggies brings out their natural sweetness and adds depth to the salad. You can do this on the grill or in a cast iron skillet—we’ve included instructions for both. Cast iron gives the best char if you have it!
Crouton Choices
We go for ciabatta croutons because they’re slightly soft and chewy, which balances the textures beautifully. But if you prefer a crunchier crouton, use something like French bread and pop it in the oven to crisp up more.
Corn Cutting Made Easy
You can either grill the corn whole and then slice off the kernels, or cut the kernels first and char them up in a cast iron skillet or on a Blackstone griddle. We love using this OXO corn peeler to make the process quick and mess-free.
Dress It Light, Then Layer If Needed
his salad is bold and balanced, so we recommend starting with less dressing than you think—then tasting and adding more if needed. It helps keep things fresh, especially if you're plating ahead of time.
Serve Warm or Room Temp
If you’re grilling or sautéing the veggies and chicken right before serving, this salad is delicious warm. But it also holds up well at room temp, so it’s great for lingering dinners or serving in stages.
