Chicken Gyros

Hibiscus Margarita
a note from us
Hi — we’re Kevin and Kate, partners in life and in the kitchen, and the creators of Date Nite.
We built Date Nite because we wanted one night a week that felt intentional without being complicated. A way to cook together, sit down together, and enjoy the evening, without the mental load of planning, coordinating, or deciding who does what.
Each Date Nite menu is designed to make cooking together feel easy and collaborative. Clear steps. Thoughtful pacing. Recipes that are flavorful but approachable. Everything is laid out so couples can share the work in a way that feels natural, whether one of you loves to cook or you’re both learning as you go.
This menu is a glimpse into how Date Nite works. Afully planned dinner with simple structure, intentional pairings, and just enough guidance to help the night unfold smoothly. No pressure. No perfection. Just a better rhythm for coming together around the table.
We’re so glad you’re here.

notes from the kitchen
A few extra tips and tricks to help you get the most out of tonight's menu.
Wrap vs Platter
Kevin loves folding everything into a classic handheld wrap, while I’m partial to a mini‐mezze platter: cut the warm naan into triangles and layer chicken, veggies, and tzatziki on each piece like little open-faced tacos. Both approaches use the same components, so everyone at the table can build dinner exactly the way they like it—no extra prep required.
Marinating the Chicken
Our yogurt-lemon-garlic marinade turns boneless thighs tender and deeply flavorful. We usually whisk it together the morning we plan to cook, but mixing it in the afternoon works too. If you want to hold off until Date Nite itself, give the chicken at least 1 hour in the marinade (that’s the absolute minimum for the lactic acid to do its magic), while 4–8 hours is ideal and an overnight rest is perfectly safe for yogurt-based marinades.
Straining the Cucumber
Grating then squeezing the cucumber keeps tzatziki from turning watery after a day or two in the fridge. I never skip this step and swear by the Ellie’s Best 12×12″ Pro-Quality Nut Milk Bag. It's faster than cheesecloth and easy to rinse out for next time.
Finishing Touches: Feta & Herbs
The gyros are plenty flavorful on their own, but if you have feta crumbles handy, sprinkle some over the veggies or right on top of the wrap. Do keep the Italian parsley in the salad mix. It brightens the whole dish and pulls every flavor together.
Extra Little Upgrades (Optional but Awesome)
Warm the naan or pitas directly over a gas flame or hot skillet for 20–30 seconds per side for irresistible charred edges.
Make a double batch of tzatziki—its cooling tang pairs beautifully with grilled veggies or chips later in the week.
