Rosemary Negroni

The classic Negroni — gin, Campari, and sweet vermouth — with rosemary syrup stirred in to soften the bitterness and add a quiet woodsy note.

Build Your Drink

Ingredients


  • 1 oz gin

  • 1 oz Campari

  • ¾ oz sweet vermouth

  • ¼ oz rosemary simple syrup (See Notes from the Bar)

  • Garnish: rosemary sprig

Cocktail method

  1. Add gin, Campari, sweet vermouth, and rosemary syrup to a mixing glass filled with ice.

  2. Stir for 30–45 seconds until well chilled.

  3. Strain into a rocks glass over a large ice cube (or regular ice if preferred).

  4. Garnish with a rosemary sprig.

Gin Choice

Choose a classic London Dry for structure or a citrus-forward gin for brightness.


Vermouth Tip

Use a high-quality sweet vermouth. It’s one-third of your cocktail and makes all the difference.


ROSEMARY SIMPLE SYRUP

Combine ½ cup water and ½ cup sugar in a small saucepan over medium heat, stirring until the sugar is fully dissolved. Add the rosemary sprig and let simmer for 2 minutes. Remove from heat and steep for 15 minutes, then strain out the rosemary. Let cool completely before using. Keeps in the refrigerator for up to 2 weeks.


Syrup Variation

Try thyme or sage syrup for an herbal swap with subtle complexity.
