Build Your Drink
Ingredients
½ oz gin
½ oz sweet orange apéritif (Aperol recommended)
½ oz fresh lemon juice
1 tsp simple syrup
3 drops rhubarb bitters
2 oz sparkling white wine
Garnish: lemon twist
cocktail Method
Add gin, sweet orange apéritif, lemon juice, simple syrup, and rhubarb bitters to a shaker with ice.
Shake briefly until chilled.
Strain into a chilled coupe glass.
Top with sparkling white wine.
Add a lemon twist to garnish.

Aperitif Choice
Aperol gives this cocktail its soft, bittersweet citrus balance. Cappelletti works too but will be slightly more bitter.
Bitters
Rhubarb bitters add a beautiful tart depth. Just a few drops make a lovely difference.
Sparkling Wine
Use a dry sparkling wine (Brut) so the cocktail stays balanced, not sweet.
Garnish Tip
Express the lemon twist over the glass to release citrus oils before placing it on the rim.
