Maple & Sage Bourbon Fizz
A cozy, wintery bourbon fizz made with maple, sage, citrus, and cream. Silky, aromatic, and crowned with a dramatic bubble-top foam. A festive twist on a classic fizz that feels equal parts comforting and elegant.

Ingredients
2 oz bourbon
¾ oz lemon juice
½ oz maple syrup
1 egg white
¾ oz heavy cream
1 sage leaf
1 oz plus additional seltzer water
Garnish: fresh sage, lemon wheel
Instructions
Place a large ice cube in the bottom of a cocktail shaker.
Add the bourbon, lemon juice, maple syrup, egg white, heavy cream, and sage leaf.
Shake for 15 seconds.
Remove the ice cube and shake again for an additional 10–15 seconds to build foam.
Pour 1 oz seltzer water into the bottom of a chilled Tom Collins glass.
Strain the cocktail into the glass.
Place in the freezer for 5–10 minutes to lightly set the foam.
Using a straw or skewer, poke a small hole through the center of the foam dome.
Slowly top with additional seltzer water to create the dramatic “fizz dome” effect.
Garnish with a lemon wheel and fresh sage.

Bourbon Choice
Use a mid-range bourbon with warm vanilla, caramel, or baking-spice notes. Overly smoky or high-proof styles can overwhelm the delicate maple-sage balance.
Maple Syrup Matters
Pure maple syrup (Grade A or B) provides the depth and warmth that simple syrup can’t replicate.
• If you prefer a sweeter drink: add an extra ¼ oz maple syrup.
• For a drier fizz: reduce by ¼ oz.
Egg White & Cream
The combination of egg white and heavy cream creates the signature velvety foam.
• If you prefer a lighter fizz: reduce cream to ½ oz.
• If avoiding egg whites: use 1 oz aquafaba for a vegan foam alternative.
Sage Flavor
Shaking with a fresh sage leaf infuses the cocktail with herbaceous, earthy aroma.
• For stronger sage flavor: muddle the leaf gently before adding other ingredients.
• For subtle aroma: simply drop the leaf in whole.
Bubble-Dome Technique
This cocktail’s visual drama comes from the slow pour of seltzer through the foam.
• Don’t skip the freezer rest — it helps stabilize the dome.
• If you don’t have large ice: shake without ice, then shake with 2–3 small cubes and strain quickly.
