  • ½ ounce fresh lemon juice

  • 1½ ounces cold water

  • 2 dashes celery bitters

  • Soda water, to top

Instructions
  1. Add the cucumber and honey syrup to a shaker and muddle until well broken down.

  2. Add the lemon juice, water, celery bitters, and ice.

  3. Shake until chilled.

  4. Strain into a glass filled with fresh ice.

  5. Top with soda water and give a gentle stir.

  6. Garnish with a long cucumber ribbon and a celery leaf or lemon wheel.

Notes from the Bar

Cucumber Prep

Leave the skin on the cucumber when muddling. The peel adds a deeper green color and a more pronounced fresh flavor to the mocktail.

Honey Syrup

Honey syrup is made by stirring equal parts honey and warm water until fully dissolved. This ensures the honey blends smoothly into the drink.

Celery Bitters

Celery bitters add a subtle savory backbone that balances the brightness of cucumber and lemon. Just a couple of dashes is enough. → Link to our celery bitters

Glass and Ice

This drink works beautifully over crushed or pebble ice, which keeps it extra cold and refreshing while softening the citrus.

Garnish Tip

Use a vegetable peeler to create a long cucumber ribbon. It adds visual interest and a light, fresh aroma as you sip.
