Beet Gin Sour

Beetroot Syrup
Ingredients
1 cup warm water
1 to 2 teaspoons beetroot powder
¾ cup sugar
Peel of 1 orange
1 to 2 tablespoons fresh lemon juice
Instructions
In a bowl or measuring cup, whisk the beetroot powder into the warm water until fully dissolved.
Strain the liquid through a fine mesh strainer or coffee filter to remove any remaining solids.
Transfer the liquid to a small saucepan and add the sugar and orange peel.
Heat gently, stirring until the sugar is fully dissolved. Do not boil.
Remove from heat, stir in the lemon juice, and let cool completely.
Strain out the orange peel, then transfer to a sealed jar or bottle. Refrigerate until ready to use.
Beet Gin Sour
Ingredients
2 ounces gin
¾ ounce fresh lemon juice
½ ounce beetroot syrup
1 egg white, optional
Instructions
Add all ingredients to a shaker.
Dry shake vigorously if using egg white.
Add ice and shake again until well chilled.
Double strain into a chilled coupe.
Notes from the Bar
Beet Flavor Control
For vibrant color with very subtle beet flavor, use 1 teaspoon of beetroot powder in the syrup. For a more pronounced earthy note, use 2 teaspoons. → Link to our favorite beetroot powder
Why Straining Matters
Straining the hydrated beetroot powder before heating prevents grit and keeps the syrup smooth and clean on the palate.
Gin Pairing
We recommend Hendrick’s gin for this cocktail. Its soft cucumber and rose notes balance the earthy beetroot without overpowering the drink.
Cocktail Glue
For a bold, opaque finish, brush a thin layer of cocktail glue onto the outside rim of the glass, then gently dip or roll the glass in beetroot powder. This is the method we used for the photos and gives the most saturated color.
Cocktail Glue: Mix ¾ oz Cointreau, 15 g (about 1 tsp) agave or honey, and 0.5 g citric acid (a small pinch) in a small jar. This mixture is shelf stable and can be stored in your pantry or bar cabinet for future use. → Link to small paint brush
For a Softer Glass Accent Option
For a softer, more diffused effect, mix equal parts water and simple syrup in a small spray bottle. Lightly spritz the outside of the glass, then sift beetroot powder over the surface using a fine mesh sifter.
