Kevin and I have never really been big Valentine’s Day people in the traditional sense, but we do love an excuse to slow down and make a really good dinner together. This week’s menu is exactly the kind of meal we would choose for our own Valentine’s night in. Simple, cozy, and meant for lingering at the table.
We’re sharing our white wine and garlic butter mussels, served with plenty of rustic bread for dipping. It’s one of those meals that feels special but unfussy, and honestly one of our favorite ways to eat. Light enough that we couldn’t resist adding a bonus dessert, too... our favorite skillet brownie. It comes together easily by hand (no mixer required unless you want one) and makes a generous, shareable dessert for two. We love ours with pistachio ice cream and macerated strawberries, but make it your own.

Just a few kitchen tips to make the most of this week's ingredients and flavors.
A Little Prep Goes a Long Way
This meal comes together fairly quickly once you begin cooking, so we recommend prepping your ingredients before you start. Chop your shallots, garlic, parsley, and tomatoes, measure your liquids, and have everything within reach. Mussels cook fast, and having your base ready allows you to focus on timing and enjoying the process rather than rushing.
How to Clean and Store Mussels
Before cooking, rinse the mussels under cold running water, gently scrubbing the shells if needed. Remove any beards by pulling them toward the hinge of the shell. If any mussels are cracked, broken, or remain open when tapped firmly on the counter, discard them. To keep mussels fresh while you prep, place them in a colander set over a bowl with a little ice either underneath or loosely on top. This keeps them chilled while still allowing them to breathe. Never store mussels submerged in water.
Rustic Bread is Highly Recommended
This dish is all about the broth, and you will absolutely want something to soak it up. We recommend serving with a rustic Italian loaf, sourdough boule, or similar crusty bread. Why We Added Tomatoes
You’ll notice we include a small amount of diced tomato in the broth. This does not create a strong tomato flavor, but it adds gentle acidity, color, and a little extra texture that balances the richness of the butter and wine beautifully.
That Splash of Cream
The small splash of cream at the end is completely optional. The broth is already delicious without it, but adding cream gives the sauce a slightly silkier, more luxurious finish. Feel free to choose whichever direction suits your mood.
Wine Matters (And It Doesn’t Have to Be Fancy)
Because wine is a primary flavor in this dish, we recommend choosing a dry, higher-acid white wine. Great options include Sauvignon Blanc, Pinot Grigio, Albariño, or an unoaked Chardonnay. Choose something you enjoy drinking — if you like the wine in your glass, you’ll likely love it in your mussels.

We baked our brownie in a small 6-inch enameled cast iron skillet for a cozy, shareable presentation. You can also divide the batter between two ramekins if you prefer individual servings. Keep an eye on baking time, as smaller dishes may cook slightly faster.
