We realized it had been a while since we shared a salmon dinner, even though it is something we always love and somehow tend to forget about. This meal came together so easily and reminded us why we return to it again and again. It is simple, satisfying, and light in a way that feels effortless, both to cook and to enjoy.
We are pairing this dinner with a miso Sazerac, inspired by a miso cocktail we made for one of our own Date Nites a few weeks ago. We loved the sweet and salty balance it brought to the glass, and since you will already have miso on hand, it felt like a natural fit. Just a few kitchen tips to make the most of this week's ingredients and flavors.
Coconut Rice Options
We love the balance of coconut milk and water for this rice. Our go-to is half coconut milk and half water, but if you’d rather not have a partial can left over, feel free to use the entire can of coconut milk and reduce the water to ¼ cup. Both versions work beautifully.
Jasmine Rice Makes a Difference
If you have the option, jasmine rice is especially lovely here. Its natural fragrance pairs perfectly with the miso-glazed salmon and coconut rice, adding warmth and aroma that regular long-grain rice doesn’t quite deliver.
Rice Cooker Friendly
This is a perfect rice-cooker meal. Add everything, set it, and forget it while you focus on the salmon and green beans. One less thing to tend to always feels like a win. → Our go-to rice cooker
Protein Swaps Welcome
Not a salmon fan? This glaze works well with other fish like cod, halibut, or even steelhead trout. You can also swap in chicken breasts. Sear them until golden, brush with the miso glaze, then finish in the oven until cooked through.
Seasoning the Salmon
There’s no need to salt the salmon before cooking. The miso, soy sauce, and glaze bring plenty of seasoning on their own. A little black pepper is all you need before searing.
Charring the Green Beans
For the best char, cook the green beans in a hot pan in a mostly single layer. A little overlap is fine, but too much crowding will steam them instead of charring. That char adds depth and richness we really love here.
Don’t Be Shy With Salt
Green beans can handle more salt than you might expect. Season gradually and taste as you go until the beans are evenly seasoned and flavorful throughout.
Finishing Touches
We like to finish the dish with a drizzle of chili oil or a spoonful of garlic chili crisp for a little heat. Totally optional, but a great way to add contrast and texture.
