5 Strawberry Summer Cocktails to Sip All Season Long

Easy, elevated drinks made with strawberry shrub, fresh citrus, and your favorite spirits.
In celebration of this week’s Strawberry Full Moon, we’re toasting the season’s sweetest fruit with five vibrant cocktails that capture its spirit (bold, ripe, and ready to be seen). This moon, full of Sagittarius fire and summer magic, invites us to celebrate what’s blooming, what’s been created, and what we’re ready to share. So we’re wrapping up our strawberry series the best way we know how, by raising a glass to the season’s sweetest offering.
These five strawberry summer cocktails are bright, playful spins on classics, made with our homemade strawberry shrub (or your favorite store-bought version). Whether you're sipping something bubbly on the porch or shaking up a bold bourbon smash for date night, there’s something lovely in every glass.

1. Blushed Gin Fizz
A velvety twist on a classic fizz with rosewater, strawberry, and a dreamy foam dome.
Ingredients:
2 oz gin
1 oz strawberry shrub
½ oz lemon juice
½ oz lime juice
¾ oz heavy cream
1 egg white
4 drops rosewater
4 drops saline solution*
1 oz soda water (in bottom of glass)
Fresh mint sprig, for garnish
*To make saline: mix 80g water with 20g kosher salt, or use a small pinch of salt.
Directions:
Shake all ingredients (except soda water) with a large ice cube until well chilled.
Discard ice and shake again (dry shake) to build the foam.
Pour 1 oz soda into the bottom of a chilled Collins glass.
Double strain cocktail over the soda.
Freeze 5–10 min to set the foam.
Poke a hole in the foam and add a touch more soda for a dramatic dome.
Garnish with a mint sprig.

2. Strawberry Bourbon Smash
Rich, herbaceous, and just the right amount of moody.
Ingredients:
2 oz bourbon
1 oz strawberry shrub
0.25–0.5 oz lemon juice
2 dashes Angostura bitters
2–3 fresh mint or basil leaves
Ice
Garnish: Mint sprig or strawberry slice
Directions:
Muddle the herbs and lemon juice in the bottom of a shaker glass. Add bourbon, shrub, bitters, and ice. Shake well and strain over fresh ice. Garnish a strawberry a herb sprig.

3. Strawberry Paloma
Bright and bold with grapefruit, lime, and just a pinch of salt.
Ingredients:
2 oz blanco tequila
1 oz strawberry shrub
2 oz grapefruit juice
0.5 oz lime juice
Pinch of salt
Sparkling water to top
Ice
Garnish: Grapefruit wedge or salted rim
Directions:
Shake the tequila, strawberry shrub, grapefruit juice, lime juice and pinch of salt with ice. Strain into a glass with fresh ice and top with sparkling water. Garnish with a grapefruit wheel.

4. Strawberry Shrub Mojito
Refreshing, minty, and just tart enough, like a beach vacation in a glass.
Ingredients:
2 oz white rum
1 oz strawberry shrub
0.5 oz lime juice
4–6 mint leaves
Club soda to top
Ice
Garnish: Mint sprig, lime wheel
Directions:
Muddle mint and lime juice in a glass. Add the rum, strawberry shrub, and ice. Stir gently. Top with soda and garnish with a mint sprig.
5. Strawberry French 75
Delicate, sparkling, and perfect for celebrations or Wednesday nights.
Ingredients
1 oz gin
0.5 oz lemon juice
0.5 oz strawberry shrub
Sparkling wine to top
Garnish: Lemon twist or strawberry slice
Method
Shake the gin, lemon juice, and shrub with ice. Strain into a flute or coupe glass. Top with sparkling wine. Garnish with a strawberry slice.
