We have been a little obsessed with focaccia this summer. Kate has made it several times, including when her dad was visiting over Memorial Day, and we just cannot seem to get enough. So we finally had to build a whole menu around it.


This one is meant to feel effortless. The focaccia does most of the heavy lifting, and everything comes together quickly once it is warm and ready. Spread it with whipped ricotta, tear the burrata over the top, pile on the roasted tomatoes and prosciutto, and finish with a drizzle of hot honey balsamic. The melon arugula salad alongside keeps it fresh and bright.


We paired this one with a Hugo Spritz, and it felt exactly right. Light, floral, a little citrusy.  It's a cocktail that makes a summer evening feel like you're somewhere in northern Italy. We think you are going to love it.

Everything you’ll need to make this meal — plus a few pantry staples you probably already have.

If you are making the homemade focaccia, plan to start it a few hours ahead to give the dough time to rise. If you are using store-bought, just remember to warm it before assembling.

MAKE THE FOCACCIA

If you have been curious about bread making but not sure where to start, this is your moment. Our homemade focaccia is one of the simplest breads you can make. That said, a good store-bought focaccia works beautifully here, too. Warm it up and it is ready to go.


BURRATA AND RICOTTA TOGETHER

We were not sure about this combination at first, honestly. Two creamy cheeses on one piece of bread felt like it might be too much. It is not. The whipped ricotta spreads smooth and garlicky, and the burrata tears open and pools on top in the best way. They work together, not against each other. Let your ricotta come to room temperature before assembling for the creamiest result.


WARM YOUR FOCACCIA

Whether homemade or store-bought, do not skip the warming step. Five to seven minutes in a 400°F oven makes a real difference. The outside gets just slightly crisp, the inside stays soft, and the heat helps everything melt together when you assemble.


MAKE IT VEGETARIAN

This menu is easy to make vegetarian. Simply leave the prosciutto off the focaccia and the salad. The burrata, whipped ricotta, and roasted tomatoes carry so much flavor that it does not feel like anything is missing.


HOT HONEY BALSAMIC

If you do not have hot honey on hand, regular honey with a small pinch of red pepper flakes works in a pinch. The heat is subtle here and just adds a little something to the drizzle without taking over.
