We wanted the free menu to feel like a real introduction to what Date Nite is all about, not just a simple recipe, but a full experience. This Shawarma-Inspired Steak Bowl does exactly that.
It has layers — a citrus-marinated steak, a parsley-mint pistou we're a little obsessed with, quick-marinated cucumbers, and a garlic sauce that ties it all together. It sounds like a lot, but each step is straightforward and the whole thing comes together beautifully. The kind of meal that feels like you really cooked.

FLAT IRON OR FLANK STEAK
Flat iron steak is a great choice here. It is tender, flavorful, and cooks quickly. Flank steak works just as well, so use whichever you can find.
GIVE THE STEAK A HEAD START
Let the steak marinate while you prep everything else. If it has been in the fridge longer, set it out 20 to 30 minutes before cooking so it cooks more evenly.
LET THE SAUCE DO THE HEAVY LIFTING
The pistou and garlic sauce bring most of the flavor. Blend until combined, then taste and adjust. It does not need to be perfect to be really good. You may want to make a little extra. It is just as good the next day on eggs, vegetables, or anything else you have on hand.
MAKE IT VEGETARIAN
Swap the steak for roasted cauliflower or chickpeas. Toss them in the same marinade before cooking to bring in that warm, spiced flavor. Both options still feel hearty and satisfying.
