A few extra tips and tricks to help you get the most out of tonight's menu.
Fresh is Best
Try not to buy your salmon too far in advance. The fresher the fish, the better the flavor. If you're shopping early, store it in the coldest part of your fridge and use it within 1–2 days.
Whole Fillet? No Problem
If you’re using a larger, whole salmon fillet rather than pre-cut portions, you may need to adjust the cooking time. For thicker cuts, consider adding the salmon to the pan sooner with the veggies or cutting it into individual portions for more even cooking.
No Need to Remove the Skin
Leave the skin on while baking. The salmon will flake easily off the skin once cooked, and it helps keep the fillet moist in the oven.
Choose Your Veggies
We paired this dish with roasted carrots and parsnips for their earthy sweetness, but you can use whatever’s in season or in your fridge. Just adjust the roast time accordingly:
Potatoes or squash winter? Add them earlier for a head start.
Broccoli or asparagus? Toss them in later so they don’t overcook.
One Pan Wonder
This is a true one-pan meal. You’ll start by roasting the veggies first, then layer the salmon on top. Minimal cleanup, minimal fuss, perfect for a relaxed Date Nite.
The Sauce is Optional (But Delicious)
We’re serving this with a yogurt dill sauce that adds brightness and balance. If dill isn’t your thing, feel free to swap in parsley, basil, tarragon, or chives—or skip it altogether. The salmon and veggies hold their own beautifully even without the sauce.
Panko Tip for Extra Crunch
Lightly toast your panko in a dry skillet before topping the salmon for an extra layer of golden crunch. It’s not required, but it adds that chef’s kiss finish.
