A note from us

This is one of our original Date Nite dinners, and it's stayed a favorite ever since. It's easy, it's effortless, and it tastes so good every single time we make it. The panko crust on the salmon turns golden and crisp in the oven, and paired with the roasted carrots and a creamy lemon yogurt sauce, it feels like something you'd order at a restaurant.


It's an easy night in the kitchen. One of you can handle the vegetables and panko topping while the other whips up the yogurt sauce, and you'll be sitting down together in under an hour.


We're pairing it with something new this time, a bright, herbal cocktail with vodka, elderflower, lemon, and fresh basil. It's light and floral, and it's a perfect match for the citrus in tonight's meal.

Just a few kitchen tips to make the most of this week's ingredients and flavors.

SALMON DONENESS

Cook to your preference. 125°F for medium rare, 135°F for medium, or 145°F for well done. Pull it a few degrees early since it keeps cooking as it rests.


VEGGIE SWAPS

Parsnips or sweet potatoes work well in place of carrots if you want to change things up. Cut them into similar sized wedges so everything roasts evenly.


PANKO PRESS

Press the panko mixture firmly onto the salmon so it holds together while baking and gets that golden, crackly texture we love.


MAKE THE SAUCE AHEAD

The yogurt sauce can be made up to a day in advance and kept in the fridge. It gets better as the flavors sit together.


PLATING TIP

For a more elegant presentation, spread the yogurt sauce on the plate as a base and set the vegetables and salmon on top instead of serving the sauce on the side.
