Dijon Cream Pork Tenderloin

&

Honey Lemon Gin Spritz

This week’s menu is one of those that feels elevated without being complicated. If you follow the steps in order, everything comes together really effortlessly, which is exactly what we love for date night.

We’re pairing it with a Lemon Honey Gin Spritz. It’s fresh and so easy to sip while you cook. You can add a little mint if you have it on hand, but it’s just as good without.

And for the playlist, we’re fully leaning into the 90s trend and throwing it back with Dido Radio this week. It’s a fun, nostalgic vibe  while you’re in the kitchen together.

Your Weekly Essentials

Everything you’ll need to make this meal — plus a few pantry staples you probably already have.

Keep it easy. One cooks, one pours drinks or cleans as you go.

notes from the kitchen

Just a few kitchen tips to make the most of this week's ingredients and flavors.

LET IT REST, TRUST THE PROCESS

One small step that makes a big difference: let your pork tenderloin sit out for about 20 minutes before cooking. This helps it cook more evenly and keeps it nice and tender.

MAKE THE POTATOES YOURS

This is a great place to play. Keep them simple, or add your own spin with extra spices. A little Cajun seasoning, smoked paprika, or even just extra garlic goes a long way. Yukon golds are our favorite, but russets or whatever you have on hand work just as well.

GREENS, YOUR WAY

We’re using kale this week, but this is an easy swap. Spinach, bok choy, or even mustard greens all work beautifully here. Use what you love or what you already have.

PORK FOR NOW, PORK FOR LATER

Pork tenderloins are often a little bigger than you need for one meal. If you’d rather not cook the whole thing, slice it in half and save the rest for later. It’s perfect for something easy like tacos, bowls, or a quick weekend dinner.

COCKTAIL, YOUR WAY

We added mint to this week’s spritz because we had it on hand, but it’s completely optional. No mint? Skip it. Have thyme? Try that instead. This one is meant to be easy and flexible.
