We love a really good salad, and over the years we’ve realized it’s all about the balance. Kate’s mom used to say she could never make a salad at home that tasted as good as one from a restaurant, but we have to disagree. The secret, in our opinion, comes down to layering flavor, texture, and just the right amount of substance so it actually feels like a full, satisfying meal.


This week’s Caribbean Chicken Salad is a little throwback to Kate’s days working at Chili’s, inspired by their classic Caribbean salad from back in the day. We’ve taken that idea and really amped it up with more texture, more freshness, and more flavor in every bite.


We’re pairing it with an effortless pineapple ranch water that’s light, refreshing, and perfect for a spring night. And for a little extra nostalgia, press play on our Cranberries radio station and let it carry you straight into those easy, laid-back 90s vibes while you cook.

Just a few kitchen tips to make the most of this week's ingredients and flavors.

TRUST YOUR INSTINCTS

This is one of those meals where you really don’t need to measure. If you’re comfortable in the kitchen, feel free to eyeball the dressing, pico de gallo, and even the chicken marinade. We often just use a spoon and build as we go. Taste, adjust, and trust your palate. This menu is very forgiving and meant to be fun.


COOKING THE CHICKEN

If you love a little char on your chicken, let the marinade drip off slightly before adding it to a hot skillet. If you prefer a more even, golden finish without as much charring, pat the chicken dry before cooking.


PICO DE GALLO OPTIONS

If you’re not a fan of tomatoes, you can skip the pico de gallo. That said, we do recommend still adding some fresh lime juice, red onion, and cilantro to your salad for that bright, fresh flavor. Those elements really bring everything together.


GIVE THE PICO A CHANCE

Even if you think you don’t love tomatoes, finely dicing them changes everything. The pico ends up feeling more like a fresh salsa than big chunks of tomato, and it adds incredible flavor to the salad. It’s worth trying at least once.


DON’T SKIP THE CRUNCH

We love adding a handful of bagged coleslaw mix (green and purple cabbage with carrots) to the base of this salad. It adds an extra layer of texture and makes the whole dish feel a little more elevated and satisfying.


LAYER YOUR CRUNCH

For toppings, we use both crushed tortilla strips and sliced almonds. You can absolutely choose one, but we love the combination of the salty crunch from the tortillas and the nuttiness from the almonds.


BE GENEROUS WITH THE FRUIT

Don’t be shy with the pineapple and mandarin oranges. They bring a bright, juicy sweetness that balances the savory elements of the salad and really make this dish shine.


FRUIT SHORTCUTS

We typically use canned mandarin oranges in light syrup for a little extra sweetness. For the pineapple, we prefer fresh for the best texture, but pre-cut works great. Canned pineapple is an option too, though the texture will be a bit softer.


MAKE IT VEGETARIAN

For a vegetarian option, try steaming tempeh, marinating it in teriyaki, and baking until golden. It’s incredible in this salad. If you want something even easier, black beans are a great addition.


HONEY LIME DRESSING

This dressing is inspired by that classic honey mustard you remember from restaurants, but with a fresh lime twist. Feel free to adjust it to your taste. Add more honey for sweetness, more lime for brightness, or more mustard for a little extra tang.
