To help your sauce come together smoothly (and avoid scrambling the eggs), let your egg and cheese mixture sit on the stovetop while the pasta cooks. The residual warmth helps it blend into a silky sauce when tossed with the hot pasta.
Bacon vs. Pancetta
We call for bacon here because it’s easy to find and crisps up beautifully. That said, pancetta is a traditional option and works great if you have it. We personally love the thinness and smokiness of bacon for this version.
