
Lemon Honey Gin Spritz
A light gin spritz with fresh lemon, honey syrup, and torn mint — clean and cooling with just enough sweetness to feel intentional.

Build Your Drink
Ingredients
2 ounces botanical gin
1 ounce fresh lemon juice
¾ ounce honey syrup (See Notes from the Bar)
2 to 3 ounces seltzer water
3 to 4 mint leaves, torn
Fresh mint, for garnish
Cocktail Method
Place all ingredients except the soda water into the base of a shaker glass.
Fill with ice and shake until well chilled
Strain into a glass filled with fresh ice.
Top with seltzer water and gently stir.
Garnish with fresh mint.

Combine 1/4 cup honey with 1/4 cup boiling water and stir until fully dissolved. Keeps in the refrigerator for up to 3 weeks.
