Sometimes you want dessert without committing to a full pan sitting on the counter for days. We love having a few simple desserts like this in our back pocket. It's something you can make at home that feels a little special, but doesn’t leave you grazing all week or spending $20 at the bakery.


This skillet brownie recipe for two is one of our favorites. It’s simple, just rich enough, and perfect for sharing straight from the pan.

Skillet Brownie Recipe for Two

Ingredients
  • 1 ounce unsweetened chocolate

  • 4 tablespoons butter

  • 1 egg

  • ½ cup sugar

  • ½ teaspoon vanilla

  • ¼ cup all-purpose flour

  • Pinch of salt


Instructions
  1. Preheat oven to 350°F. Grease a small 6-inch skillet or two ramekins.

  2. In a small pot, melt the butter and chocolate. Stir until smooth and let cool slightly.

  3. In a bowl, whisk the egg. Add sugar and vanilla and whisk for 2–3 minutes.

  4. Whisk in the chocolate mixture. Fold in flour and salt until just combined.

  5. Pour into skillet or ramekins. Bake for 20–24 minutes, until the top is set but the center is still slightly gooey.

  6. Let cool for 5 minutes before serving.


Notes from the Kitchen

  • We love topping this with fresh strawberries or raspberries for a little brightness.

  • A drizzle of cream (or even milk) adds the best extra layer of creamy goodness..

  • Vanilla ice cream is always our go-to, but use whatever you love.

  • If you like a little crunch, chopped nuts can be folded into the batter or sprinkled on top.

  • Don’t overbake. The center should stay slightly soft and gooey.
