Chicken Pot Pie Prep:
Cook the Chicken

You can absolutely use a store-bought rotisserie chicken for this recipe. It’s quick, easy, and delicious. But if you’d prefer to cook your own chicken (either for cost, quality, or personal preference), two boneless, skinless chicken breasts will do the trick. Just be sure to cook the chicken in advance so it’s ready to go when you assemble your pot pie. We’ve recommended boiling as the simplest option, if you’re comfortable using an Instant Pot, that works too. Add 1 cup of water and pressure cook on high for 7 minutes, then allow a natural release for 5–10 minutes before shredding.
