Marinate the Fish

You can marinate the ceviche a few hours before Date Nite to make things even easier. Just be sure not to do it too early—2 to 3 hours in advance is perfect. After that, the texture can start to change. Once it's marinated and mixed, cover and refrigerate until you're ready to serve.​
