Lemon Pepper Chicken Skewers

&

Maple Sage Bourbon Fizz

a note from us

We created Date Nite to take the guesswork out of planning dinner, so you can focus on what really matters. Slowing down, connecting, and sharing a meal that feels intentional.

This menu goes back to one of our earlier date night dinners, and it is still one we come back to often. It is simple, full of flavor, and always feels just a little special to make together. The lemon, herbs, and crispy coating come together in a way that feels elevated without being complicated.

We paired it with a Maple Sage Bourbon Fizz for something seasonal and a little unexpected. It is smooth, lightly sweet, and the sage complements the lemon and herbs in the dish beautifully.

Be sure to read through the Notes from the Kitchen before you begin. A few small tips will help everything come together smoothly.

Your
Date Nite Essentials

Everything you’ll need to make this meal — plus a few pantry staples you probably already have.

Turn on Lake Street Dive Radio to set the mood—soulful, playful, and perfect for a golden summer dinner at home.

Before you start, decide who is doing what so one person is not carrying the whole meal. It keeps things moving and makes the night feel more shared instead of one of you just cooking for the other.

What is something you’re really looking forward to right now?

notes from the kitchen

A few extra tips and tricks to help you get the most out of tonight's menu.

Marinate Ahead if You Can

The chicken only needs about 30 minutes, but if you have the time, letting it sit a little longer (even a few hours) deepens the flavor and makes things feel easier when you’re ready to cook.

Don’t Skip the Skewer Soak

A quick soak keeps the skewers from burning in the oven. It’s a small step, but worth it, especially if you’re broiling at the end.

That Crispy Coating Moment

The butter in the dredge is what helps everything get golden and crisp in the oven. Make sure the chicken is well coated. It’s where a lot of the texture and flavor comes from.

Massage the Kale (Trust Us)

It only takes a minute, but it makes a big difference. The kale softens, the dressing soaks in, and the whole salad feels more balanced and less raw.

Not a Kale Person?

You can easily swap the kale for arugula or spinach. No need to massage, just toss with the dressing right before serving for something a little lighter and more delicate.

Broil for the Finish

That last step is where the magic happens. Keep an eye on it, but don’t skip it. You’ll get those crispy edges that make the skewers feel extra special.
