Watermelon Aperol Spritz

Fresh watermelon juice and Aperol over ice, topped with prosecco and a splash of soda. Bright, lightly bitter, and easy to drink all summer long.

INGREDIENT LIST


  • 2 oz fresh watermelon juice

  • 1.5 oz Aperol

  • 3 oz prosecco

  • 1 oz soda water

  • Fresh watermelon wedge and basil leaf for garnish

COCKTAIL METHOD


  1. Fill a large wine glass with ice.

  2. Add the watermelon juice and Aperol and give it a gentle stir to combine.

  3. Top with prosecco and soda water.

  4. Give it one more very light stir to incorporate.

  5. Garnish with a fresh watermelon wedge and a basil leaf.

FRESH WATERMELON JUICE

No juicer needed. Muddle about one cup of fresh watermelon chunks and strain through a fine mesh strainer. You get about 2 oz of juice from a cup of watermelon and it takes less than five minutes. Fresh makes a real difference here.


THE BASIL

We went with basil instead of mint and it was the right call. Basil adds a subtle herbal sweetness that plays beautifully with the watermelon and the bittersweet Aperol. Give the leaf a gentle clap between your palms before garnishing to release the oils.


PROSECCO

Use a dry prosecco here. The watermelon and Aperol bring plenty of sweetness on their own. A brut or extra dry prosecco keeps the drink balanced and refreshing rather than cloying,


APEROL VS CAMPARI

Aperol is the move for this one. It is lighter, lower in alcohol, and more orange-forward than Campari, which lets the watermelon stay front and center. If you love a more bitter finish, Campari works but it will shift the flavor significantly.


MAKE IT A BATCH

This one scales beautifully for a crowd. Multiply all ingredients by the number of servings, combine the watermelon juice and Aperol in a pitcher, and pour over ice in individual glasses. Add prosecco and soda per glass just before serving so it stays bubbly.
