COCKTAIL RECIPE
Makes 1 cocktail
2 oz gin
3/4 oz dry vermouth
1 to 2 Vermouth Tipsy Onions, see Notes from the Bar
Make the Vermouth Tipsy Onions ahead using the recipe in Notes from the Bar. Add the vodka and dry vermouth to a mixing glass filled with ice and stir for 20 to 30 seconds until very cold. Strain into a chilled Nick & Nora, coupe, or martini glass and garnish with 1 to 2 tipsy onions on a cocktail pick.

VERMOUTH TIPSY ONIONS
These are pearl onions soaked in dry vermouth, and they make this drink. They pick up a soft sweetness and herbal depth that a jarred cocktail onion can’t match. Make them at least a day ahead so they have time to soak. → Shop our Vermouth Tipsy Onions recipe
WHY NO BRINE
We intentionally left the onion brine out. The tipsy onions are already a little sweet and vermouth-forward, and the drink tastes cleaner and more balanced without it.
WHAT MAKES IT A GIBSON
A Gibson is simply a martini garnished with a cocktail onion instead of an olive or a twist. That one swap shifts the whole drink from briny to savory and mellow.

A RITUAL WE RETURN TO
Our cocktails are part of something bigger for us. They’re the beginning of Date Nite, a connection-centered experience we created to help you slow down, share a meal, and enjoy time with the one you love.
Each Date Nite is thoughtfully planned for you, so you are not stuck deciding what to cook or how to pull the night together. We pair one cocktail with a complete menu, a simple flow from prep to plate, and small details that make the evening feel easy and connected from start to finish.
It is not about perfection. It is about presence, and creating space to reconnect, whether that is with your partner or simply with yourself, over a really good meal.
