WINTER SPICE SYRUP

Combine 1 cup water, 2 inches thinly sliced fresh ginger, 2 cinnamon sticks, 2 whole cloves, 4 to 5 whole allspice berries, and 4 to 5 broad strips of orange peel in a small saucepan. Bring to a gentle simmer for 8 to 10 minutes, then remove from heat and steep for 15 to 20 minutes. Strain and measure the finished spice tea, then add an equal volume of sugar and gently heat just until dissolved. Cool completely before using. → Shop our favorite syrup bottles

CHOOSING A GIN

A clean, citrus-leaning gin works best here. Skip anything heavily floral or juniper-forward.

GARNISH OPTIONS

Rosemary and a cinnamon stick add aroma with every sip, and the blood orange wheel carries the color. A grapefruit peel or dried blood orange wheel is the simpler option.

GLASSWARE

Crushed ice in a rocks glass keeps it cold and easy to sip. A chilled coupe works for a more classic sour.
