COCKTAIL RECIPE
Makes 1 cocktail
½ ripe plum, diced
2 oz bourbon
¾ oz fresh lemon juice
¾ oz Winter Spice Syrup
Make the Winter Spice Syrup using the recipe in Notes from the Bar. Muddle the plum thoroughly in a cocktail shaker, then add the bourbon, lemon juice, syrup, and ice. Shake well, until chilled, and double strain over crushed ice in a rocks glass. Garnish with a plum slice and a cinnamon stick.

WINTER SPICE SYRUP
Combine 1 cup water, 2 inches thinly sliced fresh ginger, 2 cinnamon sticks, 2 whole cloves, 4 to 5 whole allspice berries, and 4 to 5 broad strips of orange peel in a small saucepan. Bring to a gentle simmer for 8 to 10 minutes, then remove from heat and steep for 15 to 20 minutes. Strain and measure the finished spice tea, then add an equal volume of sugar and gently heat just until dissolved. Cool completely before using. → Shop our favorite syrup bottles
DOUBLE STRAINING MATTERS
Since the plum gets muddled directly in the shaker, straining through a fine mesh strainer on top of your regular strainer keeps small bits of skin and pulp out of the glass for a cleaner pour.
PLUM RIPENESS
Use a plum that's ripe but still holds its shape. Too soft and it won't muddle cleanly, too firm and it won't release enough juice or color.
BOURBON CHOICE
A bourbon with some spice and vanilla notes plays especially well against the winter spice syrup here. Nothing too oaky or heavy, you want it to lift the plum, not weigh it down.
