COCKTAIL RECIPE
Makes 1 cocktail
2 oz blanco tequila
4 to 5 dark sweet cherries, thawed if frozen
3/4 oz fresh lime juice
1/4 oz allspice dram
1/4 oz simple syrup
Cinnamon sugar, for the rim
Rim a rocks glass with cinnamon sugar and fill it with crushed or fresh ice. Muddle the cherries and simple syrup well in a cocktail shaker, then add the tequila, lime juice, allspice dram, and ice. Shake vigorously and double strain into the prepared glass. Garnish with a cherry.
NOTES FROM THE BAR
Heads up: We may earn a small commission on products we’ve linked here. We only recommend the real-deal favorites from our kitchen.
ALLSPICE DRAM
Allspice dram brings warm, baking-spice notes without tasting like any one single spice. A little goes a long way, so stick close to the ¼ oz called for here.
DOUBLE STRAINING MATTERS
Since the cherries get muddled directly in the shaker, a double strain through a fine mesh strainer keeps the bits of skin and pulp out of the glass for a cleaner pour.
CHERRY CHOICE
Frozen dark sweet cherries work just as well as fresh here and are often easier to find this time of year. Just be sure to thaw them fully before muddling so they break down easily.
TEQUILA CHOICE
A clean blanco tequila keeps the cherry and spice front and center. We love Lagado for our silver tequila here, nothing too peppery that would compete with the allspice.
