COCKTAIL RECIPE
2 oz rye whiskey
1 oz Averna
2 dashes orange bitters
1 dash aromatic bitters
Orange peel
Fresh rosemary sprig
Makes 1 cocktail
Stir the rye, Averna, and both bitters with ice for 25 to 30 seconds, then strain into a rocks glass over a large cube. Express the orange peel over the drink and garnish with the peel and a rosemary sprig, giving the rosemary a light slap between your palms first to release its oils.
NOTES FROM THE BAR
Heads up: We may earn a small commission on products we’ve linked here. We only recommend the real-deal favorites from our kitchen.
WHY AVERNA
Averna is a Sicilian amaro, bittersweet with notes of caramel, orange, and herbs. Using it in place of sweet vermouth gives the drink its darker color and a deeper, rounder finish.
RYE OR BOURBON
Rye keeps it spicy and dry, which balances the sweetness of the Averna. Bourbon works too and makes a softer, rounder drink.
STIR, DON’T SHAKE
This drink is all spirit with no citrus, so stirring keeps it clear and silky. Shaking clouds it and adds too much water.
ICE MATTERS
A large cube melts slowly, so the drink stays cold without watering down as you sip. → Shop our favorite large ice cube mold
BATCH IT
For 6 cocktails, combine 12 oz rye, 6 oz Averna, 12 dashes orange bitters, 6 dashes aromatic bitters, and 3 oz water, then chill in the fridge for at least 2 hours. Pour over large cubes and garnish each glass to order.
