A rich, silky bourbon flip with warm pumpkin spice syrup and a whole egg, reminiscent of pumpkin pie in a glass.

Build Your Drink

INGREDIENT LIST


  • 2 oz bourbon, or aged rum

  • 3/4 oz pumpkin spice syrup, see Notes from the Bar

  • 1 whole egg

  • Freshly grated nutmeg, for garnish

  • Cinnamon stick, for garnish

COCKTAIL METHOD

  1. Add the bourbon, pumpkin spice syrup, and egg to a cocktail shaker.

  2. Dry shake vigorously for about 15 seconds.

  3. Add ice and shake again until well chilled and frothy.

  4. Double strain into a chilled coupe.

  5. Garnish with freshly grated nutmeg and a cinnamon stick.

PUMPKIN SPICE SYRUP

Whisk together 1/2 cup packed light brown sugar, 1/2 cup water, 1/4 cup pumpkin puree, 1 teaspoon pumpkin pie spice, 1/2 teaspoon vanilla extract, and a pinch of kosher salt in a small saucepan over medium heat. Bring to a gentle simmer and cook for 8-10 minutes, stirring occasionally. Remove from the heat and let steep for 15-20 minutes, then strain through a fine mesh sieve and refrigerate until chilled. Store in an airtight container in the fridge for up to two weeks. This makes enough for several cocktails, double it if you're hosting.


BOURBON OR RUM

Bourbon leans warm and spiced, while aged rum brings a softer, more caramelized sweetness. Both work beautifully here, it comes down to what's already on your bar cart.


LEFTOVER SYRUP

Any extra pumpkin spice syrup is delicious stirred into coffee, whisked into a latte, or drizzled over pancakes and oatmeal. It keeps in the fridge for up to two weeks, so it's worth making the full batch even if you're only mixing one round of cocktails.


DRY SHAKE TECHNIQUE

Shaking without ice first fully emulsifies the egg, giving the cocktail its signature frothy texture. Don't skip this step, it's what separates a flip from a flat, thin drink.
