
Pineapple Hibiscus Margarita
A tequila margarita made with homemade hibiscus syrup and fresh pineapple juice. Tart and floral with a deep magenta color that makes it one of the most striking drinks in the glass.

Ingredient List
2 oz tequila blanco
1 oz pineapple juice
3/4 oz fresh lime juice
1/2 oz hibiscus syrup
1/4 oz agave syrup
Cocktail Method
Rim a rocks glass with salt and fill with ice.
Add tequila, pineapple juice, lime juice, hibiscus syrup, and agave to a shaker with ice.
Shake until well chilled.
Strain into the prepared glass.
Garnish with pineapple fronds and a dried hibiscus flower.

HOW TO MAKE HIBISCUS SYRUP
Combine 1 1/4 cups water and 1/2 cup dried hibiscus flowers in a small saucepan and bring to a simmer for 5 minutes. Remove from heat and steep for 15 minutes, then strain. If needed, add a little extra water to bring the liquid back to 1 cup. Stir in 1 cup sugar and heat gently until dissolved. Let cool before using. → Link to our favorite dried hibiscus flowers
PINEAPPLE JUICE — ADJUST TO TASTE
We use 3/4 to 1 oz depending on the sweetness of the pineapple. Start with 3/4 oz for a drink that's more floral and margarita-forward. Bump to 1 oz if you want a little more tropical sweetness.
AGAVE IS OPTIONAL
The 1/4 oz agave adds just enough sweetness to round everything out without overpowering the hibiscus. If your pineapple juice is very sweet, skip it entirely.
TEQUILA RECOMMENDATION
A clean blanco keeps this bright and lets the hibiscus and pineapple do the work. Espolòn or Olmeca Altos are our go-to everyday options.
SALT VS TAJÍN RIM
We used a simple salt rim here which lets the floral notes of the hibiscus come through cleanly. Tajín works too if you want a little extra kick.
