Build Your Drink
INGREDIENTs
3/4 oz bourbon
3/4 oz Aperol
3/4 oz Amaro Nonino
3/4 oz lemon juice
3-4 oz sparkling wine, to top
COCKTAIL METHOD
Add the bourbon, Aperol, Amaro Nonino, and lemon juice to a shaker with ice.
Shake well and strain into a wine glass filled with ice.
Top with sparkling wine.
Garnish with an orange twist.

WHY THE SPRITZ VERSION
The original Paper Plane is a stirred, equal-parts cocktail with no dilution beyond the ice. We shake ours and top it with sparkling wine, which lightens the whole drink and makes it feel a little more effortless for warm weather sipping.
AMARO NONINO MATTERS HERE
This is the one ingredient we wouldn't swap. Amaro Nonino brings a rounder, slightly sweeter bitterness than other amari, and it's what keeps this drink balanced instead of sharply bitter.
GARNISH OPTIONS
We used a paper airplane garnish for this one, a playful nod to the name and a detail that photographs beautifully. A classic orange twist works just as well if you want something simpler.
