Appleton rum and Campari meet fresh pineapple and lime in this classic tiki cocktail with real depth. The Campari does exactly what it should — cuts the sweetness and makes everything more interesting.

Build Your Drink
INGREDIENT LIST
1 1/2 oz Appleton Estate rum
3/4 oz Campari
1 1/2 oz fresh pineapple juice
3/4 oz fresh lime juice
1/2 oz rich Demerara syrup (2:1 sugar to water)
COCKTAIL METHOD
Add all ingredients to a cocktail shaker with ice.
Shake well for 10–15 seconds until thoroughly chilled.
Strain over fresh crushed ice in a rocks glass.
Garnish with pineapple wedges and fronds.

APPLETON ESTATE IS THE MOVE
Appleton Estate is a Jamaican rum with enough body and molasses character to stand up to the Campari without getting lost. A lighter white rum won't give you the same depth — stick with a quality aged Jamaican rum here.
RICH DEMERARA SYRUP
Regular simple syrup will work in a pinch, but the 2:1 rich Demerara is worth making. Combine 2 parts Demerara sugar with 1 part hot water, stir until dissolved, and store in the fridge. It has a deeper, almost molasses-like sweetness that makes this drink. → Link to our favorite Demerara sugar
DON'T SKIP THE CAMPARI
It might seem like an odd addition, but the Campari is what makes the Jungle Bird the Jungle Bird. Its bitterness is what keeps the pineapple from going too sweet and gives the whole drink its signature complexity. No substitute here.
CRUSHED ICE MATTERS
The Jungle Bird is traditionally served over crushed ice, and it genuinely changes the drink — the dilution is faster and the texture is softer and more slushy in the best way. If you don't have a crushed ice setting, just wrap some cubes in a towel and smash them.
FRESH JUICE ONLY
Canned or bottled pineapple juice will work but fresh-pressed pineapple juice gives you a brightness and texture that's noticeably better. Worth the extra step if you have the fruit.
