ST-GERMAIN IS THE STAR
This is not a drink to swap out the elderflower liqueur — St-Germain is what gives the Hugo its signature floral, lychee-like quality. Other elderflower cordials won't deliver the same depth. Worth having a bottle on hand.
PROSECCO OVER CHAMPAGNE
Hugo Spritz is traditionally made with prosecco, and for good reason — its softer bubbles and slightly fruity profile are a better match for the elderflower than drier sparkling wines. Don't overthink the bottle; a mid-range prosecco works great here.
SQUEEZE, DON'T POUR
The lime is a background note, not a citrus-forward element — you want a single squeeze, not a full ounce of juice. It brightens the drink without pulling it in a tart direction.
