A silky vodka and espresso cocktail with coffee liqueur, vanilla, and a cloud of egg white foam finished with cocoa. Rich enough to feel like dessert, light enough to still be a fizz.

Build Your Drink
INGREDIENT LIST
1½ oz vodka
1 oz freshly brewed espresso, cooled
½ oz coffee liqueur
½ oz vanilla syrup, see Notes from the Bar
¾ oz heavy cream
1 egg white
3-4 drops saline, optional
1 oz chilled club soda, plus more for lifting the foam
Cocoa powder and a coffee bean, for garnish
COCKTAIL METHOD
Add the vodka, espresso, coffee liqueur, vanilla syrup, heavy cream, and egg white to a shaker without ice.
Dry shake vigorously for 15-20 seconds to build the foam.
Add ice and shake again for another 15-20 seconds until well chilled.
Strain into a chilled highball glass.
Slowly pour the club soda down the side of the glass to lift the foam to the top.
Dust with cocoa powder and garnish with a coffee bean.

VANILLA SYRUP
Combine equal parts sugar and water in a small saucepan with a split vanilla bean or 1 tablespoon vanilla bean paste. Warm over low heat, stirring until the sugar dissolves, then let cool completely before straining and using. It keeps in the fridge for about two weeks.
SHORT ON TIME
Skip the syrup entirely and add ¼ oz vanilla bean paste in its place. We use the Trader Joe's vanilla bean paste and it gives the same rich, round vanilla flavor with no cooking required.
FRESH ESPRESSO AT HOME

WHY THE DRY SHAKE MATTERS
Shaking without ice first is what gives this cocktail its thick, cappuccino-like foam. Skipping this step will leave you with a thinner, less dramatic top.
SALINE NOTE
A few drops of saline rounds out the sweetness and makes the espresso taste more pronounced. It's optional, but we rarely skip it. To make you own, mix 80g water with 20g kosher salt, or use a small pinch of salt.
MAKE IT A MOCKTAIL
Omit the vodka and coffee liqueur and add an extra ½ oz espresso in their place. The egg white foam and vanilla syrup still give you that same rich, dessert-like texture.
