COCKTAIL RECIPE
Makes 1 cocktail
2 oz bourbon
1 oz apple butter syrup
3/4 oz fresh lemon juice
1 egg white
1/4 oz simple syrup, optional
Fresh thyme sprig, for garnish
Make the apple butter syrup using the recipe in Notes from the Bar. Add the bourbon, syrup, lemon juice, egg white, and simple syrup if using to a cocktail shaker and dry shake for 15 seconds. Add ice and shake again until well chilled. Strain into a stemmed cocktail glass, or over a large ice cube in a rocks glass, and garnish with a fresh thyme sprig and a light dusting of cinnamon, if desired.

APPLE BUTTER SYRUP
Whisk together 1/4 cup apple butter and 1/4 cup hot water until completely smooth. This makes enough syrup for 2 cocktails, so double it for a larger batch and refrigerate any leftovers. Unlike a standard simple syrup, apple butter syrup is made with equal parts fruit and water, so it adds rich apple flavor and a silky texture rather than intense sweetness.
THE DRY SHAKE
Shaking without ice first is what gives this drink its thick, stable foam. It emulsifies the egg white before dilution gets involved, so don't skip it even though it feels like an extra step.
SWEETNESS LEVEL
Apple butter brands vary quite a bit in sweetness. Taste your syrup before adding the optional simple syrup, some apple butters are sweet enough on their own, others benefit from that extra quarter ounce.
GARNISH OPTIONS
Thyme keeps this drink feeling earthy and a little unexpected against the sweetness of the apple butter. A cinnamon dusting over the foam adds a warm finishing note if you want a more classic fall look.
