A smoky blanco tequila margarita built with charred pineapple, fresh lime, and a spicy Tajín rim.

Build Your Drink
INGREDIENT LIST
2 oz blanco tequila
1 oz fresh lime juice
1/2 oz agave syrup
1 charred pineapple ring
Tajín, for the rim
Garnish: charred pineapple ring
COCKTAIL METHOD
Rim a rocks glass with Tajín and fill with fresh ice.
Muddle the charred pineapple with the agave syrup in a shaker.
Add the tequila, lime juice, and ice.
Shake vigorously and double strain over fresh ice.
Garnish with another charred pineapple ring.

CHARRING THE PINEAPPLE
Char fresh pineapple rings in a dry cast iron skillet or on a grill until you get real color and caramelization on both sides. This is where most of the flavor in the drink comes from, don't rush it.
TASTE BEFORE YOU BALANCE
Pineapple sweetness varies quite a bit depending on ripeness and how much char it picked up. Taste yours before adjusting, if it's on the tart side, bump the agave up to 3/4 ounce for balance.
TAJÍN RIM
Tajín brings chili, lime, and salt in one shake, so there's no need to build a separate rim mixture. Wet the rim with a lime wedge, then dip straight into the Tajín.
DOUBLE STRAINING MATTERS
Muddled pineapple leaves fibrous bits behind that a regular strainer won't catch. Double strain through a fine mesh strainer for a smooth, clean pour.
