INGREDIENT LIST
1 1/2 oz apple butter syrup, see notes from the bar
3 oz prosecco
1 1/2 oz club soda, or seltzer
Ice
Garnish: dried apple slice, fresh thyme sprig, optional
COCKTAIL METHOD
Fill a wine glass or stemless wine glass with ice.
Add the apple butter syrup, then the prosecco, then top with the club soda.
Gently stir to combine.
Garnish with a dried apple slice and a fresh thyme sprig, if desired.

APPLE BUTTER SYRUP
Whisk together 1/4 cup apple butter and 1/4 cup hot water until completely smooth. This makes enough syrup for 2 cocktails, so double it for a larger batch and refrigerate any leftovers. Unlike a standard simple syrup, apple butter syrup is made with equal parts fruit and water, so it adds rich apple flavor and a silky texture rather than intense sweetness.
BUILD IT GENTLY
Stir gently rather than shaking or stirring hard. This is a spritz, you want to keep as much bubble from the prosecco as possible.
PROSECCO MATTERS
A dry prosecco keeps this from tasting like straight apple juice. The apple butter syrup already brings plenty of sweetness, so a crisp, dry bottle balances it out.

MAKE IT A BATCH
For a crowd, mix the apple butter syrup and prosecco together ahead of time and refrigerate. Add the club soda and ice glass by glass right before serving so it stays bubbly.
