Shawarma Inspired Prep: Marinate the Flat Iron Steak
If you’d like to get a head start, the steak can be marinated for up to 2 hours in the refrigerator. When you’re ready to cook, be sure to pull it out of the fridge and let it sit at room temperature for about 20–30 minutes before searing. This helps the steak cook more evenly and results in a more tender, flavorful bite.
