Caribbean Fiesta Salad Prep
For this Caribbean Chicken Salad, you can prep several components in advance. The pico de gallo and honey lime dressing can be made earlier in the day or even the night before and stored in the refrigerator until ready to serve. You can also marinate the chicken up to 4 hours in advance for the best flavor. Because the marinade includes fresh lime juice, we don’t recommend preparing the chicken too far ahead, as the acid can begin to affect the texture. If you prefer, you can prep everything the afternoon of your Date Nite so that when it’s time to eat, all that’s left is cooking the chicken and assembling your salads.
