Romesco Breakfast Sandwiches
If you have leftover romesco sauce, ciabatta, and greens, you’re halfway to the perfect weekend brunch. Toast your bread, add some smashed avocado, soft scrambled or fried eggs, and build from there. Maybe you have prosciutto, manchego, or even pickled onions on hand, go for it. This is a choose-your-own-adventure kind of sandwich.
